Cheese Stuffed Shells

This is one of my husband and kid's favorite meals. It's not a very hard meal to put together, so after a long day of work it's not a lot of trouble to put this delicious meal on the table.

Cheese Stuffed Shells

1 box jumbo shells
1 jar spaghetti sauce (or homemade equivalent - none in the freezer so I used jarred tonight)
1 container Ricotta cheese
1/2 cup Parmesan cheese
1 egg
2 TB parsley
1/4 tsp salt
1/4 tsp pepper
16 oz shredded Mozzarella cheese

Instructions:
Cook shells according to package directions. Mix ricotta, Parmesan, egg, parsley, salt, pepper and 8 ounces Mozzarella together. Place a thin layer of spaghetti sauce over bottom of a 13x9 inch pan. Stuff shells with cheese mixture and place in pan. Spoon the remainder of the sauce over each shell and sprinkle with remaining Mozzarella cheese. Bake for 20-30 minutes in a 350F oven.
